The FLATBREAD Pizza Co. opened for catering the Spring of 2009, following from this success we put together a plan to open our restaurant in Breckenridge, CO. The restaurant features a Forno Bravo wood-fired oven, built by Master Mason - Brian Scott from Boulder, CO. Kudos to our brilliant Architect - Matt Stais Architects. We burn seasoned fruit wood of Apple and Peach in the oven for cooking. Our space seats about 38 inside plus during summer months an additional 15 seats are on the outside patio and we will offer acoustic music.
The open and rustic space features local pine kill trees harvested locally and used to build our bar and siding on the walls. The tables are made from reclaimed wood from Viridian in Portland, OR. We had our custom metal worker Lou Bibeau - Inferno Metal Works build us some funky gears and pendant wheel / gear lights which incorporates into our bike elements throughout the space. Our open kitchen with our dome shaped oven offers our customers a warm and rustic environment to enjoy lunch and dinner.
The pizza at The FLATBREAD Pizza Co. is baked in the intense heat of a Forno Bravo wood-fired oven featuring a one of a kind super-thin artisan crust. The crust has a slightly brown charred under belly while the inside stays slightly chewy. Each batch of our dough is made fresh and hand rolled. We offer a Gluten Free option also. Sometimes we add herbs and hard cheeses into the crust. You just never know. We top our pies with the best ingredients we can find, pizzas are baked in about 3 minutes time. In addition to great flatbread pizza, the restaurant offers a variety of salads and starters featuring local foods delivered daily by our network of farmers when possible. The restaurant also offers 7 great canned beers and a 7 bottle wine list with an outstanding selection of wines and 7 options by the glass. Enjoy.....
